Quick spicy pasta
We’re not afraid of spicing up dinner times here at zest, so if you’re looking for a tasty, hot pasta dish we’ve got you covered: this Spicy Sun Dried Tomato paste with Harissa will definitely hit the spot.
1 Red onion
3 Garlic cloves, crushed
3 tbsp Zest Sundried tomato paste
150g Cherry tomatoes, halved
½ cup Vegan cream
¼ cup milk alternative
2 tbsp Harissa paste
2 tbsp Vegan spread
Cook pasta as per package instructions until al dente
Meanwhile heat vegan spread over a medium-low heat and add the chopped red onion and crushed garlic. Cook for 3-5 minutes until the onion is translucent
Add your halved cherry tomatoes and cook for a further 2-3 minutes.
Add your Zest Sun Dried Tomato paste and mix before pouring in vegan cream and plant milk.
Add your Harissa paste, stir in and cook until the sauce has thickened, around 5-8 minutes
Add 1/4 cup pasta water and the pasta and toss through
Serve and enjoy!
