Italian inspired Buddha bowl
We love a buddha bowl here at zest and wanted to find away to combine that with another of our great food loves: Italian cuisine. A typical buddha bowl consists of: a grainy base, veggies, greens, protein and fats. We wanted to find a way to include all of these whilst keeping it Italian and we mostly succeeded (I’m looking at you, humous 👀).
1 small Broccoli
½ tsp Garlic powder
2 tbsp Zest Basil Pesto
250g Cherry Tomatoes
1 tbsp Balsamic Vinegar
Grate entire crown of Broccoli, right down to the bottom of the stalk. Preheat some oil in a frying pan over a medium heat and add the broccoli and garlic powder.
Meanwhile cook pasta as per package instructions.
Sauté kale in a pan with a little oil over a medium heat.
Once the broccoli has released liquid and looks a darker colour of green add 2 tbsp basil pesto and mix.
Add 1/4 cup pasta water to the broccoli and pesto before adding the cooked pasta and mix.
Place tomatoes in a microwaveable bowl, drizzle with balsamic vinegar and olive oil, season with salt and pepper, cover with cling film and microwave for 2 minutes (800w).
Add everything to a bowl, top with hummus and serve.
